How to Make Sushi Like a Pro

Sushi is one of our most popular dishes, and it’s no wonder. These Oriental bite-sized snacks are nutritious, tasty treats and are perfect, whether as an alternative packed lunch or as impressive canapés at a party. And what’s more, they’re really easy to make yourself! Cardiff sushi chef, Arvind Rawat, has some handy tips on how to make your own sushi.

"Sushi can be raw or cooked and is always made with specially flavoured rice and nori seaweed. It's a very healthy food and very easy on the stomach. It's eaten all over the world. Sushi can be made with meat or fish, or can be vegetarian and mixed with fruits like mango, as well as crunchy little pieces like cucumber. The key to creating authentic sushi lies in the preparation of the rice."

Traditionally, sushi rice is moistened with mirin or sake but combining it with a rice vinegar mixture is fine too. Ideally, sushi is formed on a bamboo mat, but a nice shortcut is to use clingfilm on a flat surface.

 

Preparing the rice

Ingredients:

  • 225g (8oz) sushi or short grain rice
  • 55ml (2fl oz) mirin, sake or rice vinegar
  • 570ml (1pt) water

Method:

  • Thoroughly rinse rice in cold water then place in a large saucepan with a lid.
  • Pour over 570ml (1pt) cold water, bring to the boil and simmer for 25 minutes or until all water is absorbed.
  • Remove from heat, cover with the lid and allow to stand for 10 minutes.
  • Tip rice on to a large flat clean metallic tray and dress with the mirin while turning frequently to help the rice cool to room temperature.

 

Smoked Salmon and Cream Cheese Sushi Roll

Ingredients (makes six to eight pieces):

  • Sushi rice
  • 50g (2oz) smoked salmon
  • Cream cheese to taste
  • One sheet of nori seaweed, toasted

Method:

  • Slice the salmon into thin strips.
  • Place the nori, shiny side down, on to a bamboo mat or clingfilm.
  • Have a small bowl of cold water nearby and dip fingers into it before spreading the rice over the seaweed with your hands, leaving 2.5cm (1in) of the seaweed bare at the top.
  • Place the salmon lengthways in the centre of the rice and smear a layer of cream cheese on top.
  • Working away from you, roll up the sushi like a swiss roll, pressing lightly with both hands.
  • Keep in a cool place until ready to serve but not in the fridge, which would dry out the rice.
  • Use a slightly damp knife to trim both ends then cut the roll into six or eight pieces.
  • Serve with wasabi and soy sauce.

 

Cucumber and Mango Sushi Roll

Ingredients (makes six to eight pieces):

  • Sushi rice
  • Cucumber cut into thin strips as required
  • Mango cut into strips as required
  • Five teaspoons mayonnaise
  • Three teaspoons wasabi paste
  • One sheet of nori seaweed, toasted
  • Sesame seeds

Method:

  • Lay the seaweed shiny side down on a bamboo mat or clingfilm.
  • Dip fingers in cold water and spread on the rice.
  • Smear on the mayonnaise and wasabi in a line along the centre of the rice then lay the cucumber and mango on top.
  • Roll up and cover in sesame seeds.
  • Keep in a cool place until ready to serve but not in the fridge, which would dry out the rice.
  • Use a slightly damp knife to trim both ends then cut the roll into six or eight pieces.
  • Serve with Japanese pickled ginger and soy sauce.

 

California sushi roll

Ingredients (makes six to eight pieces):

  • Sushi rice
  • Half an avocado sliced into thin strips
  • Two teaspoons toasted sesame seeds
  • Quarter of a cucumber cut into thin slices
  • Five teaspoons mayonnaise
  • 50g (2oz) crab meat
  • One spring onion finely sliced
  • One sheet of nori seaweed, toasted

Method:

  • Mix mayonnaise and spring onion in a bowl.
  • Place nori shiny side down on a bamboo mat or clingfilm.
  • With cold hands, spread rice over the seaweed. Sprinkle on toasted sesame seeds and press down until they stick.
  • Gently pick up the nori and flip it over so that the rice is facing the mat. (It should be sticky enough to remain intact)
  • Spread the crab, cucumber and mayonnaise on to the upturned side of the nori and gently roll so that the rice is on the outside.
  • Rest it for one minute before cutting into six to eight pieces.
  • Serve with pickled ginger and soy sauce

Eating My Way to My Goal Weight

Here's yet another post about weight loss. I've been a naughty, naughty girl for the past week. Like when I was trying to quit smoking the first time, I was having difficulty to hold on and not fall off the wagon. But, I did the past week. The temptation is just so overwhelming that I gave in. And now, I feel more guilty than ever.

Yesterday, I was supposed to go to this event where they're going to launch a weight loss program that has been changing the lives of people everywhere - well, people who were able to afford it. Like always, I was caught up with work and an emergency project for a client, so I wasn't able to come even though I was dead set about going the other day. It was a weight loss program I was really intrigued by because of the fact that they're not going to ask you to take anything like diet pills, hcg weight loss drops, or any weight loss inducing drug. Their method is by changing the things you eat.

Thus the title of this blog post. I have read about it many times from various blogs, and one thing I know is it's based on your blood type. Upon further research, my brother and I found out that for our blood type, we should be avoiding wheat or grains like rice, but change our diet to meats. It made a lot of sense because the last time I stopped eating rice, no exercise and just drinking tea everyday, I lost a significant amount of weight. That's why I believe in it completely.

Since I cannot afford and I'm not willing to spend Php 55,000 for a weight loss program where I have to spend more money separately to shop for what they wanted me to eat, I am focusing on changing my diet. No fasting or whatsoever, but I'm completely removing rice from my diet. Well, okay, not really completely, but I'll go back to just eating the viands that my nanay cooks and avoid rice altogether. And go back to drinking tea too.

The reason why I said I'm eating my way to my goal weight, it's because I know dieting or starving myself won't work. I've done it before. I strongly believe, as I continue to read and be inspired by others who were successful, that eating the right food can heal us and can make us lose weight the right way. I've done it before, and I can do it again. I just wish I have more time to shop for ingredients for this diet though.

Right now, I'm drinking wheatgrass and I feel that it helps me. I'll have more updates about my weight loss in a few weeks. I hope by the time we go to Bohol for our planned vacation, I lost a few pounds or at least inches off my body.

Addicted

Last Tuesday, as I was browsing through my Facebook newsfeed, a video shared by a fellow blogger caught my eye. It's the My 600-lb Life of Melissa Morris. I watched it and from the first 20 minutes of the video, it became slightly painful to watch because of the memories it brought back.

Enabling the Addiction

I have never weighed over 180 lbs my entire life. Though I didn't really watch what I eat back then, I guess my used to be "active" lifestyle somehow kept my weight at 140-160 lbs. I'm 5'4" in height and I think I looked better when I was at that weight, so I didn't bother losing more.

In 2010, I weighed over 230 lbs. I was at my heaviest. And this is actually the first time I am revealing my weight to the world because I've been ashamed of it for the longest time. Every time I look at myself in the mirror during those times, I felt shame and pity, but I shrug it off and carry on with the next fatty meal.

As much as I don't want to put any blame on anyone, after watching the video of Melissa and how her loved ones (husband and parents) treat her as she struggled with her enormous weight gain over a span of 6 years, I realized that they are to blame too. They have allowed themselves to be enablers of Melissa's addiction to food, especially her husband Chris. In a way, they made her feel it's okay to continue with her eating because she is loved.

I have experienced this in my last serious relationship that lasted for 5 years. And I gained over 60 lbs throughout those years and I might have gained more if it continued. I don't completely blame my ex for my massive weight gain, but for sure, my ex was an enabler.

In the video, you'll see how Melissa confronted her husband Chris about him liking the fact that she was fat and she needed him - something I can completely relate to. It was a painful realization. I say if you are with someone who is that insecure that they're holding you down and letting you waste your life just so they can keep you, you have to realize you deserve better. And I am more than thankful that I had that realization almost 2 years ago before it was way too late.

Being overweight, I understand that people who tell me I must lose weight, I'm gaining weight or getting fatter mostly just care about me or they feel like I will be much better if I lose all the excess fats. I have an issue with saying those comments out loud (or publicly, like in a Facebook comment), but doing it in an intimate conversation shows you respect and care for someone, which a few have done for me.

 

Food is Addictive Too

Good habits

The problem with addiction to eating is people tend to treat you like just someone who LOVES food. We all have to realize that addiction may come in many forms. We can be addicted to, not just smoking, alcohol or drugs, but to habits or anything that gives us pleasure. And we all know how satisfying food can be, especially when it's all sweet, greasy and/or meaty.

Smoking or being addicted to alcohol and drugs may be real nasty and serious, but being extremely fat IS a health issue as well.

 

 

Dealing with Addiction

One must understand that when dealing with addicts, giving advice is not enough. An addict needs more than just words of encouragement. An addict needs a push, and sometimes, I mean it literally. An addict needs a very valid reason to stop his or her addiction. But, all this should be done while you're still there, supporting them as they go through the withdrawal period.

Most times, addicts need a wakeup call to turn their life around. For me though, I didn't want to wait for something really bad to happen before I realize my lifestyle needed changing.

I was a chain smoker. I was addicted to the effects of nicotine to my whole body. It helped me clear my head when I'm stressed from work or if anything is bothering me. I can smoke more than a pack a day, especially when I'm at a party or get-together with my friends. Just this year, I decided to stop my addiction - cold turkey, for the second time - because I realized my health is at risk. I learned this after a checkup with my doctor. No, I'm not sick or anything. But, the result was enough to wake me up towards addressing my addiction.

Don't be stuck

Most addicts like I was back then are not so lucky. I was able to do it all by myself. I have plans for my future that I'm not ready to give up on yet. And it's a sad fact that some addicts are in denial and don't see anything life-changing that can happen in their future as a result of their quitting on their addiction, so they continuously spend their days sticking to their routine or habits.

This is where loved ones come in. In the case of Melissa, her husband adapted too well to the fact that he needs to take care of her all their lives. He knows he was an enabler, but he needed to do more than that to help her. Sure, he might have said or done something to encourage her to lose weight, but the thing is, most overweight or overly obese people think that when you tell them to lose weight, you're insulting how they look. Based on my experience, you just have to make them understand that it's all about their HEALTH and their FUTURE.

I lost 26 pounds since that relationship ended. I am still not at my goal weight and I gained a few pounds because of my love for food. The difference now is whenever I look in the mirror, I tell myself, "Argh, ang taba ko pa! Konting tyaga pa!" (I'm still fat! Need to push more). Just like what Melissa said, you have to stop looking for easy gratifications. It will take time and we have to be patient.

This month, I have decided to seriously take control of my life and my weight. I don't want to end this journey abruptly or at a young age. I believe I have a bright future ahead of me, and I can't wait to see it unfold. :)

I am so happy to see that Melissa is getting the life she deserves. :) If you are having weight issues, the video might help encourage you too. No, not to go through gastric bypass, but to realize how much life would be better if we take our addiction, whatever it may be, in check. :)

Moving Forward

I have one flaw that I feel has held me down for the longest time - I care too much. I care to an extent where I'll decide to do things on my own just to avoid all the stress of asking people to do things for me even when it's their responsibility or their job. I got this from my Nanay. I'm not blaming her because I believe that this has drawn me into not being satisfied with mediocrity when I know I have the ability to turn things into something worthwhile.

Don't be too busy for livingIt's frustrating and tiring most of the time because I don't like pressuring people to do what they're supposed to. But, I have accepted the fact that at times, at work or even in my personal life, you have to be the bad cop just to get things done well.

It's quite lonely to think that at my age and being a single woman, I am still worrying about others. I feel like I should be focusing on my future most importantly. But, I can't really run away from responsibilities I have delegated to myself because I know there's no one else who's willing enough to take action.

I hope that in the near future, I will get that much deserved appreciation and satisfaction that when I look back to this day, I will smile and proudly say I'm the one they can always count on.

With that said though, this year, I want to start focusing on my future. MY future.

Taking Control of My Life

I have never been THIS busy my entire life, but I'M LOVING IT! Why? Because of everything I'm doing now (which I also happen to love!), I'm capable of providing for my family and helping my mom with the finances at home. And most importantly, I'm doing all the work at the comforts of my own bedroom. How blessed and lucky am I? :)

Turn your CAN'TS to CANS, and dreams into plans

The truth is, I don't think luck has anything to do with what I have accomplished so far. I know and I believe I have worked my butt off to get to where I am now. Like what I always say, if you're determined enough to change your situation or the quality of your life, YOU CAN. You have all the power to do it.

Sure, you can be motivated by other people and their experiences, but in the end, it all boils down on how much you want to do it for yourself. Don't wait for the tides to change. Don't fricking wait! Don't just retweet or repost motivational or inspirational quotes. TAKE ACTION! It will do wonders!

I guess this is why I never wanted to be a bum or someone who depends on others to live my life. I have always been independent, even when I was very young. I know for sure that it's because of what I've seen from my nanay - how she struggled to keep our family afloat, all the while dealing with someone who she thought she can depend on her entire married life. She is a strong woman, and I am a strong woman because I wanted to be like her - a woman who can stand on her own two feet, with my head held up high.

I have big plans for my future, and now, I'm focused on improving my overall health, so I can live longer and enjoy my life to the fullest. And that's why I'm also helping my mother deal with her health too. I want her to be with me while I take giant leaps towards my oh-so bright future. :)

I Miss You, Sun

It's a gloomy Tuesday morning and I can't concentrate on what I'm doing because of the heavy rains and strong gusts of wind I can hear from outside. Photos upon photos of flooded areas around the Philippines is starting to scare me.

I can't remember exactly the last time when it didn't rain the whole day. I thought September will be the scariest month for me because of the memories of typhoon Pedring. I guess, because of the climate change and what is happening to our planet today, the typhoon season decided to come in early. Well, I wish that's the case because if this is just a preview, I don't think Metro Manila can take it any more.

Gloomy Weather

I miss the sun shining outside. Though I complain about the heat, I want to feel the warmth from the sun again. And I know a lot of my countrymen now wish the same - sana umaraw na po.

I was worried earlier because I thought my nanay still has to come to work amidst this threatening weather. I was relieved to find out that even most of the government offices declared no work day today, except to those who are part of disaster operations.

To everyone who are braving the weather today, especially those who are working to help our kababayan in rescue operations, thank you and I pray that you all be safe.

And to all my fellow Filipinos, let's all pray that the sun will come shining on us again very soon. If not today, very soon.

Slow July, Hoping for a Productive August

It's a cold, gloomy Wednesday and it seems like tropical storm Gener has no plans of leaving the country yet. I usually love this kind of weather, but it's too depressing because of fears of a replay of typhoon Pedring. I'm just glad that I have a long list of things to accomplish that I can keep my mind off, at least for a while, the flood here our city.

The month of July seemed like forever, especially because of financial troubles I encountered. However, for some reason, it's now August and I manage to still have money in my account. I spend the end of the month checking on how much I've earned and spent the past month, and I honestly don't know how I was able to get by. And I can't be more than thankful that at the end of the day, my family can still have 2-3 meals a day.

Saving for a rainy dayYou might think I'm too extravagant for my own good. My expenses from July are not from shopping senselessly online and offline. I was able to take care of improvements in my computer shop business. I pay all our bills here, except for our water bill. I paid off the last credit card bill for my computers at my internet cafe, and I can proudly say they're now my own! :)

I also paid off my Pag-ibig and Philhealth contributions 'til the end of 2012. This August, I'll be paying for my mom's SSS contributions and mine. Aside from these, I'm looking at signing us up with a new HMO. My parents and I are not getting any younger, so it's time to take insurances for the future more seriously than ever. See, I am now thinking of rainy days that might come. Since I started working online and as a freelancer, I can no longer depend on anyone to take care of all these, so I have to do it all by myself. Since I wanted to start seriously earning money online, I needed to buy new hosting, domains and components I'd need for the sites I'm setting up this August. Keeping track of my personal finances

After working on my end-of-month report of expenses from July, I have vowed to keep my finances in-check. In fact, I have decided to revamp my blog, Pinay Online Money Maker, to also focus on managing online earnings. It can be a little tricky, especially for frequent online shoppers like me, to save our hard-earned money from our online endeavors. This is why I am taking this more earnestly now because I have big plans for my future.
